## Tristram’s Journey
I began my weight loss journey a month before the OffSec 500 challenge launched, and I’m thrilled to share that I’ve lost approximately 70 pounds, shed 6 inches off my waist, and dropped a shirt size. The dietary changes I’ve made have now become second nature and feel like a natural part of my daily routine, rather than a chore. If I can achieve this, I believe you can too! I’ve detailed the changes I’ve implemented in the hopes that they might inspire and assist others.
I discovered Dr. Gundry on YouTube, where he discussed superfoods that significantly aid in calorie breakdown, a concept he refers to as a ‘caloric bypass.’ While there are many ways to incorporate this idea into your diet, some quick wins include olive oil, goat products, avocado, and shiitake mushrooms.
My daily caloric intake is around 1000-1500 calories. I don’t feel hungry and haven’t experienced any discomfort with this approach.
## General Guidelines
- No processed foods
- No carbs from anything from veggies
- No added sugar except from fruit
- No red meat
- Chicken, salmon, cod, haddock, shrimp, and scallops are great
## Intermittent Fasting
I made a lot of these changes all at once and to help myself kick start the process I incorporated intermittent fasting for the first two weeks. I skipped breakfast, except for black coffee, and ate two eggs seasoned with pepper at noon. For dinner, I focused on tomato-based meals. I also made sure to drink at least 160 ounces of water daily. Staying well-hydrated is important for overall health and helps support your body’s natural detoxification processes. This is a lot of water but just try your best with makes sense for your current body type.
While the general recommendation is to aim for a weight loss of about 2 pounds per week, I experienced a more rapid loss. It can be challenging to stick strictly to this guideline, so it’s important to listen to your body and adjust your approach if needed. Additionally, since your liver will be working hard to manage changes in your diet and metabolism, it’s wise to limit the use of Tylenol and Ibuprofen during this time to prevent additional strain.
### Typical Day
This is a very general breakdown of my typical day in meals. My breakfast and lunch are pretty much the same every day and I’m happy with this. However, where I like to have fun is with my dinners.
- Breakfast
- 1 Banana or ¼ cup of blueberries with black coffee
- 40 oz of water
- Lunch
- 2 eggs with salt and pepper
- 40 oz of water
- Dinner
- See Below
- 40oz of water
I have really enjoyed making soups and stews for my dinners. They’re all almost the same but with some variations between them. Here is my base:
Start with one beefsteak tomato. Dice it and cook it until the juices start to release. For a rich, creamy texture, stir in one tablespoon of goat cheese and one tablespoon of red pepper hummus. This combination is so delicious that you might never go back to store-bought tomato soup!
Once your base is ready, you can customize it to suit your tastes. For a thicker sauce and deeper flavor, add a tablespoon of tomato paste. I’ve also made a sun-dried tomato pesto that’s significantly healthier (and cheaper) than what you get at the store that also helps thicken up your base.
If you prefer a soupier consistency, mix in a cup of bone broth. From here, feel free to add any extra ingredients you like.
I’ve been coming up with alternative meals when I’m tired of soups/stews such as buffalo cauliflower which is much better than I anticipated.
If anyone would like more precise recipes for anything shown below please tag me on #food-and-recipes on the OffSec Discord and I’ll be more than happy to share with you all!
